The Covid 19 epidemic has forced many of you to close your businesses, either partially or completely. Takeaway sales are not enough to replenish the coffers, and insurers are being cautious or even absent. For some, the lack of tourists does not help matters. Don't rush headlong into debt: taking on too much or reopening without realistic projections could work against you instead of giving you a new boost...

3. Review your menus


It is important that your financial concerns or lack of visibility do not impact on the quality of your cooking.
So, to avoid this, you may need to review your menu and opt for menus that allow you to reduce your costs. You can also keep only the most popular dishes on the menu, or those that your most loyal customers request most often. To reduce your costs, why not open only part-time? If most of your turnover is at lunchtime or in the evening, this
may be an interesting solution. Re-open as normal when demand returns to pre-Covid levels. Make sure your staff understand this measure: not all your employees may be able to return to work, or not with the same number of hours as before. This understanding is important because you will need them when you reopen.
