How Soum Soum managed to stay competitive in the Parisian restaurant market
"We were able to improve our efficiency and optimize our time, which has had a significant impact on our profitability and success."
Your restaurant business is about to get a boost from online sales and delivery. As you know from our regular articles, this is a growing consumer demand that is set to continue. Your customers are ready for a treat, and you are only two orange peels away from increasing your turnover. Before you rush off to take photos of your tagliatelle, remember these three mistakes you should not make!
Do not rush into offering for delivery what you offer in your restaurant. If you rush it, you could end up with dishes that don't stand up to delivery, overcrowded kitchens and, ultimately, unhappy customers. Think about dishes that you can make in large quantities, and without cluttering up your kitchen. Choose food that doesn't lose its appearance when transported by scooter. And if nothing on your current menu meets these criteria, it's time to start a new menu!
If you include photos of your dishes with your menu (which is essential), your customer will expect to find the same quality of dish at home
when it is delivered. So don't disappoint them, and make your dishes as beautiful as they are good!
If you want to sell sushi and pizza, salads, burgers and Lebanese dishes, it is best to segment your brand. Why? Because delivery platforms classify different establishments according to the type of food they deliver. And your customers will find you more easily even if they don't know you. Segmentation allows you to target your customers more effectively. Young parents concerned about their children's diet, professionals who prefer tacos at lunchtime or students looking for a vegan diet, etc. will find you more easily if you create specific brands for each type of
gastronomy. You will also be able to test new menus with new ingredients without interfering with menus that are already working.
Include in your menu available for delivery dishes that you do not offer in your physical restaurant. This is partly because you can't change your menu too often in your own restaurant, and partly because by finding simple menus to make, you can increase your order volume without overloading your kitchen staff. These new dishes may be easier to transport than your currently available dishes.
On the cash flow side, you can think about a new business model toincrease your profit margins. And your customers will not be tempted
to compare the prices of your online menus with those of your in-store menus!
Another advantage is that you can try out new ingredients, in new preparations, and see if they "catch on". If it does, why not include these
menus on your menu when they disappear from your takeaway?
