Adopt sustainable practices in your restaurant

Environmentally friendly agriculture is more demanding than traditional agriculture. It requires careful crop rotation, avoidance of chemicals, soil maintenance and protection of your crops from animals. While French consumers are looking for healthier and more environmentally friendly food, it is sometimes difficult for them to afford the price differences.

Finding consistency between this expectation and the food you offer can be part of your growth process. To get you started and encourage this transformation within your establishment, we suggest 8 sustainable practices. They will bring you closer to the expectations of your customers, especially the Z and Y generations, who are very sensitive to ecological issues.

 

1. Discard non-recyclable packaging

It is a good practice to phase out all your plastic packaging. Their reputation is becoming increasingly tarnished and they can easily be replaced by cardboard or bamboo containers.

To prove your commitment to your customers, provide a container for glass.

You can also recycle toilet paper rolls and inform your customers with a nice sticker in your washroom.

 

2. Choose committed suppliers

Decide to select suppliers who also favour sustainable consumption. In concrete terms, their commitment can be translated into the use of biodegradable containers or a reduction in their greenhouse gas emissions (thanks in particular to a reduction in the number of journeys made when delivering their products).

 

3. Grow your own seasonal fruits and vegetables

To take your commitment even further, you could grow your own fruit and vegetables. This would drastically reduce the number of kilometres your food travels between the place of production and your customers' plates! If this requires logistics that you are not able to assume at the moment, you should preferably turn to local producers and only put dishes based on seasonal fruit and vegetables on your menu.

 

4. Avoid wasting leftovers as much as possible

As the general public knows, restaurants throw away large amounts of food, so to prevent this from happening in your establishment, keep track of your inventory. Donate your leftover food to local charities and food banks. Have you found local farmers? Give them your leftovers, they will use them as fertilizer.

 

5. Choose eco-friendly cleaning products

Sustainable practices are not limited to food. Extend your responsible practices to the maintenance of your restaurant. Choose environmentally friendly products (you'll find this information on the label).

 

6. Dematerialize your documents

Your customers are already used to it, so jump on board. Instead of giving a paper invoice or receipt, why not offer them in electronic format? For menus, you might consider creating them in digital format.

 

7. Choose energy-efficient appliances

It's not just the environment that will benefit - your wallet will too! By using more efficient appliances that consume less water and electricity, you should see a reduction in your bills.

 

8. Educate your staff

For this approach to have a real impact in your establishment, make your employees aware of these practices. They are in the best position to pass on your commitments to your customers.
